His journey to becoming one of Bermuda’s most respected officials began on the field as a player for BAA’s FA Cup-winning team in 1956. However, a bout of appendicitis during a tour in the northeastern US pivoted his path towards refereeing.

Dunstan’s officiating career started with local matches, with one of his first significant assignments being a match involving the Stanley Matthews XI at the National Sports Club in the late 1950s. His aptitude for fair play and decisive calls quickly earned him recognition, leading to opportunities to officiate matches featuring international teams like Manchester United, Chelsea, West Ham, and Crystal Palace.

In 1965, Dunstan achieved his Grade One Referee card, and by 1966, he became the first Bermudian to be FIFA listed. This milestone marked the beginning of a remarkable international refereeing career. One of his notable assignments was at the 1967 Pan Am Games in Winnipeg, Canada, where he handled a highly controversial match between Mexico and Colombia, which ended in physical altercations and player dismissals.

Dunstan's commitment to maintaining fitness was evident as he trained alongside Bermuda's national football team at the National Stadium. His fitness and dedication were crucial as he took charge of several high-stakes matches, including World Cup qualifiers and the CONCACAF Champion of Champions final between Haiti and Jamaica in 1969. The Bermuda Sun hailed the International Youth Tournament held in Bermuda in 1969, where Dunstan officiated, as one of the biggest occurrences in local sports history.

Despite retiring from active officiating in 1971 due to increasing violence against officials, Dunstan remained deeply involved in the sport. He contributed by giving lectures and mentoring up-and-coming referees, ensuring that his knowledge and experience benefited future generations.

Dunstan believed that officiating was not for everyone, stating, "You have to like what you're doing. I had fellows who couldn't stand the pressure." His fairness, decisiveness, and passion for the game made him one of Bermuda’s most esteemed officials.
